I spent a summer working for Huston Rammed Earth back in 2006. They work across NM. I'd recommend their work. Website here http://www.hustonrammedearth.com
I worked with Chandler Huston on a couple of projects up in Taos - one of which included rammed earth fireplaces.

Hoping some of you in the southwest might have a recommendation for a skilled earth builder within reasonable distance of Santa Fe that could assist with a thermal mass wall including a fireplace in a new home project. There's also a kiva fireplace outdoors that will receive a rammed earth veneer.
